Apple Cinnamon Muffins 🍏

Soft, fluffy muffins packed with warm cinnamon flavour and sweet apple pieces — perfect served warm with a cup of tea or coffee.
What You’ll Need
Dry Ingredients
* 2½ cups plain flour
* 1 cup caster sugar
* 2 tsp baking powder
* 1 tsp bicarbonate of soda
* 2 tbsp ground cinnamon
* 1 can apples, drained
Wet Ingredients
* â…“ cup melted butter
* ÂĽ cup vegetable oil (or any neutral oil)
* â…“ cup Greek yoghurt
* Âľ cup buttermilk
* 2 tsp vanilla extract
* 2 eggs
Topping
* 2 tbsp rolled oats
* 2 tbsp cinnamon sugar

Method
1. Preheat your oven to 220°C and line a muffin tray with paper cases.
2. In a large bowl, whisk together the flour, caster sugar, baking powder, bicarbonate of soda and cinnamon. Fold through the drained apples until evenly coated.
3. In a separate bowl, whisk together the melted butter, oil, Greek yoghurt, buttermilk, vanilla extract and eggs until smooth.
4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Avoid overmixing to keep the muffins soft and fluffy.
5. Divide the batter evenly between the muffin cases, filling them almost to the top. Sprinkle each muffin with oats and cinnamon sugar.
6. Bake for 5 minutes at 220°C, then reduce the oven temperature to 180°C and continue baking for 18–20 minutes, or until golden and a skewer inserted into the centre comes out clean.
For smaller muffins, bake for 10–15 minutes after reducing the temperature.
7. Allow the muffins to cool slightly before serving.
These are delicious served warm with butter, and the cinnamon sugar topping gives the perfect crunchy finish and did I mention the house smells devine .
