Homemade Granola

Crunchy, wholesome and packed with all the good stuff. This homemade granola is loaded with toasted oats, crunchy nuts and seeds, chewy dried fruit, coconut flakes and chunks of rich dark chocolate. Every bite is the perfect balance of sweet, crunchy and satisfying.
What you need

* 1 cup rolled oats
* ½ cup pepitas
* ½ cup flaked coconut
* ¼ cup flaked almonds
* ½ cup mixed unsalted nuts
* ¼ cup maple syrup
* ¼ cup tahini (or your favourite nut or seed butter)
* 1 tbsp vanilla extract
* 1 tbsp ground cinnamon
* Pinch of salt
* 2 tbsp dried apricots, chopped
* 2 tbsp dried cranberries
* 1 tbsp dried plums (prunes), chopped
* 2 pieces (about 40g) 70% dark chocolate, roughly chopped
Method
Preheat the oven to 170°C and line a baking tray with baking paper.
In a small bowl, whisk together the maple syrup, tahini and vanilla until smooth.
In a large bowl, combine the oats, pepitas, flaked coconut, almonds, mixed nuts, cinnamon and salt. Pour over the maple mixture and stir well until everything is evenly coated.
Spread the mixture in an even layer over the prepared baking tray.
Bake for 10 minutes, then remove from the oven and gently stir the granola to ensure it toasts evenly and doesn’t burn.
Return to the oven for a further 5–8 minutes, or until lightly golden and fragrant.
Allow the granola to cool completely. Once cooled, stir through the chopped dried apricots, cranberries, dried plums and dark chocolate.
Store in an airtight container for up to 3 weeks.
Serving Suggestions
Enjoy sprinkled over Greek yoghurt and fresh fruit, poured over your favourite milk, or simply grab a handful for a nourishing trail mix-style snack on the go.
