Rich, chewy, crunchy and naturally sweet - these little bites are packed with wholesome ingredients straight from nature. Think caramel-like dates, crunchy nuts and seeds, all wrapped in dark chocolate and finished with sea salt. A nourishing little treat that feels indulgent while still celebrating real food.
What you need

12 dates, pitted
3 tbsp water
1/4 cup pumpkin seeds
1/4 cup cashews
1/4 cup sliced almonds
1/4 cup pecans
2 tbsp hemp seeds
Chocolate Coating
1 packet 70% dark chocolate (or darker if preferred)
1 tsp coconut oil
Sea salt, for sprinkling
Add the dates and water to a hot pan over low-medium heat. Stir continuously until the dates soften and break down into a thick, sticky paste.
Remove from the heat and stir through the pumpkin seeds, cashews, almonds, pecans and hemp seeds until fully combined.
Form the mixture into a log shape. Roll tightly in parchment paper and place in the fridge for about 1 hour, or until firm.
Remove from the fridge and slice into roughly 1cm bite-sized pieces. Roll or mould into your preferred shape.
Add the dark chocolate and coconut oil to a microwave-safe bowl. Microwave in 30-second bursts, stirring between each burst, until smooth and glossy.
Dip each date bite into the melted chocolate, allowing excess chocolate to drip off. Place onto lined baking paper and sprinkle with sea salt.
Refrigerate until the chocolate has hardened.

* Store in the fridge for up to 1 week.
