Orange Almond Biscuits

Oranges are in season and these Orange Almond Biscuits are everything you want in a homemade cookie, soft, chewy and bursting with fresh citrus flavour.
Made with simple pantry ingredients, they’re naturally gluten-free and have the perfect balance of sweet orange and nutty almond.
2½ cups almond flour
¾ cup caster sugar
⅓ cup fresh orange juice
1-2 tsp finely grated orange zest
Method
Preheat oven to 170°C
Line a baking tray with baking paper.
In a large bowl, combine the almond flour, sugar and orange zest.
Pour in the orange juice and mix until a soft dough forms.
Roll tablespoon-sized portions of dough into balls and place on the prepared tray.
Gently flatten each ball with the palm of your hand
Bake for 12-15 minutes, or until lightly golden around the edges.
Allow the biscuits to cool on the tray for 10 minutes before transferring to a wire rack to cool completely.
