Pistachio & Feta crusted rack of lamb.

A beautifully tender rack of lamb coated in a golden pistachio crust with creamy feta, sweet honey and fragrant za’atar. It looks impressive but is surprisingly simple to make.
What you need

1 rack of lamb
2 tbsp Dijon mustard
1 tbsp minced garlic
1/2 cup pistachios, roughly chopped
2 tbsp honey
50g soft feta, crumbled
2 tbsp za’atar
1 tbsp extra virgin olive oil
Salt and cracked black pepper
Method
Preheat oven to 200°C fan forced.
Pat the lamb dry and season generously with salt and pepper.
In a small bowl, mix together the Dijon mustard, garlic, honey
Spread the mixture all over the lamb rack.
On a chopping board, chop pistachios, feta and za’atar together. Press the mixture firmly onto the top of the lamb. Drizzle with extra virgin olive oil.
Place the lamb into a lined baking dish, Roast for:
* 25–30 minutes for medium
* 30–35 minutes for medium-well
Rest the lamb for 10 minutes before slicing between the ribs.

Serve with roasted veggies or a fragrant couscous.
