Salmon poke bowls for dinner and they were simple, fresh, and absolutely delicious. With just a few separate components, you can create an amazing, healthy dinner in under 20 minutes.
What you need

Salmon
Salmon fillets, skin removed, deboned, and cubed
1 knob ginger, grated
2–3 cloves garlic (or 1 heaped tbsp minced garlic)
1 tbsp light soy sauce
1 tsp sesame oil
2 tbsp honey
Quick Pickled Carrots
2 large carrots, julienned
1 cup boiling water
2 tbsp white sugar
1 tsp salt
1/4 cup rice wine vinegar
Combine the boiling water, sugar, salt, and rice wine vinegar until dissolved. Pour over the carrots and allow to pickle for at least 1 hour (4 hours is ideal for maximum flavour).
Bowl Ingredients
Steamed rice
Cucumber ribbons
Sliced avocado
Thinly sliced capsicum
Edamame beans
Chopped spring onions
Crispy fried shallots (optional)
Sesame seeds
Bang Bang Sauce
2 tbsp mayonnaise or Greek yoghurt
1 tsp sriracha
1 tsp rice wine vinegar
Mix together until smooth and transfer to a piping bag or small squeeze bottle for drizzling.
Method
Combine the salmon with the ginger, garlic, soy sauce, sesame oil, and honey.
Place the salmon into the air fryer basket and sprinkle with sesame seeds.
Air fry at 180°C for approximately 12–15 minutes, or until cooked to your liking.
Assemble your bowls with rice, cucumber, avocado, capsicum, edamame, and pickled carrots.
Top with the cooked salmon, drizzle generously with bang bang sauce, and finish with spring onions, sesame seeds, and crispy shallots.
