Sausage and broccoli pasta.

A simple, comforting pasta that comes together quickly with Italian sausage and tender broccoli. Perfect for an easy weeknight dinner.


What You Need

6 Italian sausages, casings removed and roughly chopped

1 small red onion, thinly sliced

1 head broccoli, cut into florets

350g pasta of choice

1 cup grated parmesan (reserve 1/2 cup for topping)

2–3 tbsp pasta water

1 tbsp Olive oil

Salt & pepper

Crispy chilli oil(optional)



Bring a large pot of salted water to the boil and cook pasta until al dente. Reserve 1 cup of pasta water before draining.


Meanwhile, heat a drizzle of olive oil in a large fry pan over medium heat. Add the sausage meat and cook, breaking it up as it browns.


Once the sausage is golden, add the red onion and cook until softened. Stir through the broccoli and cook for another 3–4 minutes until vibrant and tender.


Add a splash of reserved pasta water to loosen everything in the pan, then stir through 1/2 cup parmesan until melted and silky.


Add the cooked pasta and toss well to coat. If needed, add more pasta water for a glossy sauce consistency.


Season with salt and cracked pepper, then finish with the remaining parmesan and chilli oil on top before serving.
