Seed & Nut Chocolate Fudge Cups

These little seed and nut cups are packed with crunch, goodness and healthy fats — perfect for a nourishing snack or sweet treat straight from the freezer.
What you need

• 1/4 cup sunflower seeds
• 1/4 cup pepitas / pumpkin seeds
• 1/4 cup hemp seeds
• 1/4 cup chia seeds
• 1/4 cup sesame seeds
• 1/4 cup finely chopped dried apricots
• 1/4 cup finely chopped cashews
• 1/4 cup almond butter/paste (pure ground almonds)
• 1/4 cup maple syrup
• Pinch of salt
• 1 block chocolate, melted
Method
Preheat oven to 180–200°C.
In a large bowl, combine all seeds, chopped nuts and dried apricots. Add the almond butter, maple syrup and a pinch of salt, then mix well until everything is evenly coated.
Press mixture firmly into a prepared silicone mold or lined tray, compacting tightly so the cups hold together once set.
Bake for 10–15 minutes, or until lightly golden and fragrant. Allow to cool slightly.
Melt your chocolate and pour over the baked seed and nut mixture.
Place in the freezer for 30 minutes to 1 hour, or until firm before removing from molds
