Shredded Beef Tacos

Taco Tuesday 🌮 but even better - slow cooked, and ready for when I walked in the door tonight - winning all accounts!!
Now this meal does require slow cooking time, but literally takes 5 mins to prepare and walk away - only to return to a cooked meal and house smelling of delicious goodness.

What you need

Taco seasoning (or you can create your own seasoning with chipotle powder, onion powder, garlic powder, all spice and coriander powder)
1 – 2 tbsp olive oil
1 beef chuck or brisket cut into pieces
5 garlic cloves, minced
1/2 onion , diced
3-4 cup orange juice
1 can crushed tomatoes
1 cup beef stock
1 cup of chipotle sauce (found in your Mexican supermarket aisle)
Salt and pepper
First cut beef into big pieces and sprinkle with spices
Sear the meat in a hot pan - then add everything else into the pan >>>> now you can skip this step which I did 🤫BUT I do recommend doing searing off your meat, as it adds another depth of flavour.
Slow cook slowly in a crockpot in the oven or in a slow cooker until the beef falls apart.
Shred
Toss back into the sauce.
Serve with soft taco shells/bread, guaco or diced avocado, sour cream, lettuce, tomatoes and cucumbers with a squeeze of lime to finish…. #yum
