Sticky Pork lettuce cups

These sticky pork lettuce cups are packed with flavour, crunch and plenty of hidden veggies. Juicy pork mince is stir-fried with fresh vegetables and coated in a rich hoisin-soy glaze, then served in crisp lettuce cups and topped with toasted cashews and sesame seeds. Perfect for a quick weeknight dinner, entertaining platter, or a lighter meal that doesn’t compromise on taste.


Serves: 4–6


Ingredients


Filling


* 500g pork mince

* ½ onion, finely diced

* 2 garlic cloves, finely diced

* 3 mushrooms, finely diced

* ¼ capsicum, finely diced

* ½ zucchini, finely diced

* 2 spring onions, finely diced (greens reserved)

* ¼ cup hoisin sauce

* 1 tbsp dark soy sauce

* Splash of fish sauce

* 1 tbsp sesame oil


To Serve


* Cos or butter lettuce leaves

* Toasted cashews

* Sesame seeds

* Reserved spring onion greens


Method


1. Heat the sesame oil in a large frying pan or wok over medium-high heat.

2. Add the onion, white parts of the spring onion and garlic. Stir-fry until fragrant and softened.

3. Add the pork mince and cook until lightly browned, breaking it up as it cooks.

4. Add the mushrooms, capsicum and zucchini. Stir-fry for 3–4 minutes until the vegetables soften.

5. Stir through the hoisin sauce, dark soy sauce and fish sauce. Simmer for a few minutes until the mixture becomes glossy and slightly sticky.

6. Spoon the pork mixture into crisp lettuce cups.

7. Finish with toasted cashews, sesame seeds and the reserved spring onion greens.


Tip: For extra heat, add a finely diced chilli or a drizzle of sriracha before serving. These are also great prepared ahead of time, with the filling reheated just before serving.

If pork isn’t your thing - switch for chicken mince.
