Thai Inspired peanut curry chicken skewers!

Why hello “fakeaway” Thai on a Monday with little to no fuss and you won’t be disappointed.


What you need

* 3–4 tbsp crunchy peanut butter

* 2–3 tbsp light soy sauce

* 2 tbsp red curry paste

* 2 tbsp curry powder

* 2 tbsp brown sugar

* 1 can coconut cream

* Juice of ½ lime

* 500g chicken (breast or thigh), or substitute with beef or pork

* Bamboo skewers (soaked in water)


Method


1. Prepare the Chicken

Dice the chicken into evenly sized cubes. Thread onto pre-soaked bamboo skewers.

2. Make the Sauce

In a bowl, whisk together the peanut butter, soy sauce, red curry paste, curry powder, brown sugar, coconut cream, and lime juice until smooth and well combined.

3. Marinate

Pour half of the sauce over the chicken skewers, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best flavour.

4. Cook the Skewers

Preheat a BBQ or grill to medium-high heat. Cook the skewers for 10–15 minutes, turning occasionally, until the chicken is cooked through and lightly charred.

5. Prepare the Sauce

Meanwhile, pour the remaining sauce into a saucepan. Bring to a gentle boil, then reduce heat and simmer for a few minutes until slightly thickened.

6. Serve

Serve the skewers hot, drizzled with or alongside the warm peanut sauce.

The satay sauce was really tasty with the chicken skewers. It had a creamy peanut flavor with just the right mix of sweet and a little bit spicy. The sauce went perfectly with the grilled chicken and made the skewers even more flavorful. It was thick, smooth, creamy and great for dipping definitely the best part of the dish.
