Apricot Bliss Balls

As a kid my favourite school tuckshop treat were the apricot logs - they were laden with coconut and sugar - and from time to time I still crave them… it’s like school nostalgic memories however, this is my take on a healthier version - packed full of fibre from the dates, sweetener from the dried apricots and good fat from the coconut oil. You can’t go wrong!
What you need

1 cup dried apricots
1/2 cup cashews
5-6 dates (softened)
1/2 cup of desiccated coconut
1/2 cup oats
1 tbsp coconut oil.
.
Place all ingredients into your food processor and blitz.
Roll into tablespoon sized balls. You can leave plain or roll in extra coconut for that extra coconut kick.
