Healthy Broccoli & Cranberry Salad

This has become my one of my favourite go to salads recently. Especially for a work lunch. This mix of broccoli, cabbage, red onion, cranberries, sunflower seeds, almonds, cashews, pumpkin seeds provides powerful antioxidants, healthy fats, fiber, and essential nutrients that support heart health, immunity, digestion, skin, and inflammation balance.


The dressing is a mix of flaxseed oil, apple cider, honey and Dijon - providing rich in omega-3 fatty acids (ALA) that help reduce inflammation, support heart and brain health, improve skin hydration, aid digestion, and promote hormonal and cholesterol balance.

What you need

2 cups broccoli finely shredded

1 green apple (i kept the skin on but you can peel)

1 cup cabbage finely shredded

1/2 red onion finely diced

1/3 cup slivered almonds

2 tbsp sunflower seeds

1/4 cup cashews

1/4 cup pumpkin seeds

Dressing

1/3 cups flaxseed oil

2 tbsp honey

2 tbsp apple cider vinegar

1/3 cup dijon mustard

1 tsp garlic powder

Salt and pepper to season..

In a dry pan, dry fry your nuts and seeds, making sure you don’t burn - set aside - allow to cool slightly.

In a large bowl add your broccoli, cabbage, Cranberries, onion and apple.


Add your cooled down nuts and seeds

.

Mix well.

.

For your dressing - mix all your ingredients in a jar and shake well - if you don’t have a jar, mix in a bowl with a whisk.

Pour your dressing over the salad and enjoy!
