Quick and Easy Red Curry Dumpling Stir-Fry

Yep, you heard right! This dish combines all my favorites into one delightful meal. Using just one wok, I make a Tuesday dinner quick, easy, and essentially mess-free. Let’s dive into this delicious recipe!


What You Need

  • 1 pack of egg noodles (softened as per packet directions)

  • 1 pack of your favorite dumplings (store-bought or homemade)

  • 2 carrots, shredded

  • 2-3 cups of shredded cabbage

  • 1 bunch of broccoli, chopped

  • 3 spring onions (white part chopped into one-inch pieces; green part finely sliced)

  • 1/2 onion, thinly sliced

  • 2-3 cloves of garlic, minced

  • 2 tablespoons of red curry paste

  • 2 cans of coconut cream

  • 1 heaped tablespoon of peanut butter

  • 2 teaspoons of light soy sauce

  • 1 teaspoon of sugar

  • 1 cup of water


Cooking Instructions


  1. Heat the Wok

    In a wok, heat some oil over medium heat.


  2. Sauté Onion and Garlic

    Add your onion and garlic. Quickly soften them for a minute or two.


  3. Fry the Curry Paste

    Toss in the red curry paste and fry for about one minute. This step brings out the flavors!


  4. Add Vegetables

    Now, add your shredded cabbage and carrots. Toss them around in the pan to coat with the curry.


  5. Stir in Coconut Cream

    Pour in the coconut cream and stir well. This will create a creamy base for your dish.


  6. Mix in Peanut Butter and Seasonings

    Stir in the peanut butter, soy sauce, and sugar. Give it a quick mix to combine everything.


  7. Add Broccoli and Spring Onions
